Blue Cheese Burger Meatloaf

This is an absolutely delicious way to take a traditional meatloaf and some flavor.


2 lbs ground beef
1 qt sliced portabella
¾ cup of bread/ hamburger bun
1 large onion
2 eggs
5 oz. blue cheese
½ teaspoon of salt
½ teaspoon of pepper
¾ teaspoon of parsley flakes
5 T Olive oil


Preheat oven to 350 F
– In large bowl combine ground beef, ½ qt of sliced/diced mushrooms, bread, ½ minced onion, eggs, 2.5 oz. of blue cheese, salt,
pepper and parsley. Mix thoroughly.
– Place mixture in ungreased loaf pan.
– Cook for 1 hour 30 minutes
-During last 15 minutes place remainder of Blue Cheese on top.
-In a separate pan combine olive oil, remaining mushrooms and onions. Saute in pan until brown. Serve over sliced meatloaf.
