Add some Heat to your Winter: Chili Recipe

Tried of the cold?  Want to warm up?  Here’s a little spice to melt away that ice!

 

Ingredients

4 Pounds Roseda Beef
4 Garlic Cloves, minced
1/4 c. Cooking Oil
3 c. chopped Onion
2 3/4 c.Water, divided
2 c. Celery, sliced
3 cans Diced Tomatoes, undrained
30 oz. Tomato Sauce
16 oz. Chipotle Salsa
3 T Chili Powder
2 t Ground Cumin
2 t Dried Oregano
1 t Sea Salt
1 t Fresh Ground Black Pepper
1/4 c Flour
1/4 c Yellow Cornmeal

 

Directions

Saute the ground beef and garlic in oil until browned.

Add the yellow onions.

Cook and stir for 5 minutes.

Stir in 2 cups of water and the celery, tomatoes, tomato sauce, salsa, chili power, cumin, oregano salt and pepper. Bring to a boil.

Reduce heat, cover and simmer for 2 hours or until tender.

Combine the flour, cornmeal and remaining water, stir until smooth. Bring the chili to a boil.

Add the flour mixture, cook and stir for 2 minutes or until thickened.

4 Pounds Round Steak, cut into 1 inch cubes
4 Garlic Cloves, minced
1/4 Cup Cooking Oil
3 Cups chopped Onion
2 3/4 Cups Water, divided
2 Cups Celery, sliced
3 Cans Diced Tomatoes, undrained, (14 1/2 ounces each)
2 Cans Tomato Sauce, (15 ounces each)
1 Jar Chipotle Salsa, (16 ounces)
3 Tablespoons Chili Powder
2 Teaspoons Ground Cumin
2 Teaspoons Dried Oregano
1 Teaspoon Sea Salt
1 Teaspoon Fresh Ground Black Pepper
1/4 Cup Flour
1/4 Cup Yellow Cornmeal
Shredded Cheddar Cheese
Sour Cream
Sliced Green Onion
Sliced Ripe Olives
Preparation:
1. In a dutch oven over medium high heat, saute the steak and garlic in oil until browned.

2. Add the yellow onions.

3. Cook and stir for 5 minutes.

4. Stir in 2 cups of water and the celery, tomatoes, tomato sauce, salsa, chili power, cumin, oregano salt and pepper.

5. Bring to a boil.

6. Reduce heat, cover and simmer for 2 hours or until tender.

7. Combine the flour, cornmeal and remaining water, stir until smooth.

8. Bring the chili to a boil.

9. Add the flour mixture, cook and stir for 2 minutes or until thickened.

10. Garnish with cheese, sour cream, onions and olives.
