A Southwestern Inspired Meatloaf

Tomorrow is Flag Day in Mexico and although this is not a Mexican meal, its got some southwestern flavor.


2 lb Roseda ground beef
1/4 c chopped onion
1/8 c chopped green pepper
1 teaspoon salt
1 teaspoon Cayenne pepper
1/2 c frozen whole kernel corn
2 chopped green onions
1 t Southwestern seasoning
1/2 c bread crumbs
2 eggs
1/2 c salsa sauce
2.5 Tablespoons chopped green chilies
1 c shredded Monterey Jack cheese,
1 c Chili sauce


Preheat oven to 350 degrees. In a large bowl, combine the ground beef, onion, green pepper, garlic, salt, cayenne pepper, frozen corn, green onion, seasoning, bread crumbs, eggs, salsa, green chilies, cheese, olives and chili sauce. Mix well with your hands.

Place into a greased loaf pan and bake for about 1 to 1.5 hours, until meat is no longer pink and juices run clear.
